Preheat the oven to 400°F (205°C). Place the butternut squash halves cut-side up on a baking sheet, brush with 1 tbsp olive oil, and roast for 35ā40 minutes, until the flesh is completely tender when pierced with a fork and the edges are lightly caramelized.
Let the squash cool for 10 minutes, then scoop the flesh into a food processor. Add the ricotta, Parmesan, nutmeg, 1/4 tsp salt, and black pepper. Pulse until smooth and well combined. Transfer to a bowl and refrigerate while you make the dough.
