1 tsp xanthan gum (omit if your blend already contains it)
1 tsp instant yeast
1 tsp baking powder
½ tsp salt
1 tsp olive oil, plus more for the pan
½ cup warm water (about 110°f / 43°c)
1 large egg

For the topping

1 lb boneless, skinless chicken breasts
½ cup buffalo hot sauce
2 tbsp unsalted butter
½ tsp garlic powder
¼ tsp black pepper
1 ½ cups shredded mozzarella cheese
¼ cup crumbled blue cheese (optional)

For serving

3 stalks celery, thinly sliced (optional)
2–3 tbsp ranch dressing (optional)
2 tbsp sliced scallions, green tops only (optional)

Instructions

1
Preheat the oven to 425°F (220°C). Lightly oil a 12-inch round pizza pan or a rimmed baking sheet and line it with parchment paper.
2
In a large mixing bowl, whisk together the gluten free flour blend, xanthan gum, instant yeast, baking powder, and salt. Add the olive oil, warm water, and egg, then stir until a soft, slightly sticky dough forms. Let the dough rest for 10 minutes so the flour hydrates and the dough becomes easier to handle.
