Spaghetti squash transforms into tender, noodle-like strands that soak up bold flavors beautifully, and this ginger-forward version is proof that a vegetable side dish can absolutely steal the show. The sauce gets its savory depth from coconut aminos — a soy-free, sesame-free swap that delivers that umami punch without any of the usual label-reading stress. Fresh ginger and garlic bloom in coconut oil until fragrant and golden, layering in warmth and a little heat that makes every forkful interesting. A pinch of turmeric adds a subtle earthiness and a gorgeous golden hue, while a splash of apple cider vinegar brightens the whole dish at the end. Many Asian-inspired recipes lean heavily on sesame oil or tahini for flavor, but this one proves you don't need either to build something deeply satisfying. Optional fresh cilantro on top adds a pop of color and a herby finish that ties everything together. It's light, naturally gluten-free, and comes together in one skillet after the squash roasts — weeknight dinner sorted.

Preheat the oven to 400°F (205°C). Brush the cut sides of the spaghetti squash with 1 tbsp of the coconut oil and season with 1/4 tsp of the salt. Place cut-side down on a baking sheet.
Roast for 35–40 minutes, until the skin yields easily when pressed and a fork slides through the flesh without resistance. Remove from the oven and let rest for 5 minutes.
