Spaghetti squash transforms into tender, noodle-like strands that soak up bold flavors beautifully, and this ginger-forward version is proof that a vegetable side dish can absolutely steal the show. The combination of fresh ginger, garlic, and turmeric bloomed in coconut oil creates an aromatic base that smells incredible and tastes even better. Coconut aminos bring a savory, umami-rich depth while a small splash of apple cider vinegar adds just enough brightness to balance the dish — no citrus fruit required. That swap matters, because so many Asian-inspired recipes default to lime or orange juice, which can make them off-limits for anyone avoiding citrus. Here, every ingredient earns its place without relying on anything that would cause a problem. The whole thing comes together in one skillet after the squash roasts, making cleanup genuinely easy. A scatter of fresh cilantro on top is optional but highly recommended if you want a little herby finish.

Preheat the oven to 400°F (205°C). Brush the cut sides of the spaghetti squash with 1 tbsp of the coconut oil and season with 1/4 tsp of the salt. Place cut-side down on a baking sheet.
Roast for 35–40 minutes, until the skin yields easily when pressed and a fork slides through the flesh without resistance. Remove from the oven and let rest for 5 minutes.
