Roasted spaghetti squash gets a serious flavor upgrade here, thanks to a fragrant base of fresh garlic and real grated ginger that fills the kitchen with the kind of aroma that makes everyone wander in asking what's for dinner. Every ingredient in this dish is exactly what it says it is — coconut oil, coconut aminos, apple cider vinegar, fresh aromatics — so there's no guessing what's hiding behind a "natural flavor" label. The coconut aminos bring a savory, slightly sweet depth that ties everything together without any of the additives you'd find in conventional soy sauces or bottled stir-fry sauces. Ground turmeric adds a warm, golden hue and an earthy note that makes the whole bowl look as good as it tastes. The squash itself roasts until tender and then gets scraped into long, noodle-like strands that soak up the ginger-garlic sauce beautifully. A handful of fresh cilantro on top is optional, but it adds a bright, herby finish that really pulls the dish together. This is the kind of clean, vibrant weeknight meal that proves eating without artificial flavors doesn't mean eating without personality.

Preheat the oven to 400°F (205°C). Brush the cut sides of the spaghetti squash with 1 tbsp of the coconut oil and season with 1/4 tsp of the salt. Place cut-side down on a baking sheet.
Roast for 35–40 minutes, until the skin yields easily when pressed and a fork slides through the flesh without resistance. Remove from the oven and let rest for 5 minutes.
