Rutabaga is one of those underrated root vegetables that absolutely shines when you give it a proper sear, and this hash proves it. The cubed rutabaga gets golden and caramelized in coconut oil before meeting ground turkey, fresh ginger, turmeric, and a splash of coconut aminos for a savory, slightly earthy flavor that feels anything but boring. Apple cider vinegar adds a bright lift that ties the whole skillet together without any added sugar or off-plan ingredients sneaking in. Every single component here ā from the coconut oil to the coconut aminos ā is compliant, so there's no label-checking stress, just cooking. The layered spice combination of fresh grated ginger alongside ground ginger and turmeric gives the turkey a warmth that makes this feel like a restaurant-worthy meal rather than a weeknight scramble. Finished with sliced scallions and optional fresh parsley straight from the skillet, it's colorful, satisfying, and hearty enough to carry you through a busy morning or a filling dinner.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8ā10 minutes, stirring every 2ā3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
