Rutabaga is one of those underrated root vegetables that deserves way more attention, and this savory hash puts it front and center in the best possible way. The cubes get golden and tender in coconut oil before joining ground turkey, fresh ginger, turmeric, and garlic for a skillet meal that smells absolutely incredible while it cooks. Both fresh and ground ginger pull double duty here, layering warmth and depth while also offering the kind of anti-inflammatory support that makes this dish genuinely smart for hormone health. Coconut aminos and a splash of apple cider vinegar tie everything together with a subtle savory-tangy finish that keeps the flavors bright rather than heavy. Rutabaga is a lower-glycemic swap for white potatoes, which matters when you're trying to keep blood sugar steady ā a real priority for managing symptoms through food. The whole thing comes together in one skillet, finished with fresh scallions and optional parsley for a pop of color. It's hearty, satisfying, and the kind of weeknight dinner you'll want on repeat.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8ā10 minutes, stirring every 2ā3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
