Rutabaga is one of those underrated root vegetables that absolutely shines when you give it a proper sear, and this hash proves it. The diced rutabaga gets golden and caramelized in coconut oil before being tossed with savory ground turkey, fresh ginger, turmeric, and a hit of coconut aminos for a deeply satisfying one-pan meal. That combination of warm spices and apple cider vinegar gives the whole dish a bright, complex flavor that feels anything but boring. Coconut aminos stand in beautifully for soy sauce here, delivering that umami depth without any grains or legumes sneaking into the mix — making this a genuinely clean, grain-free option. Everything comes together in a single skillet, which means less cleanup and more time enjoying a hearty, nourishing plate. Finish it with fresh scallions and a handful of parsley and you've got a dish that looks as good as it tastes. It works just as well for a weekend brunch as it does for a quick weeknight dinner.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
