Rutabaga doesn't get nearly enough credit as a hearty, satisfying base for a one-pan meal, and this hash is proof it deserves a permanent spot in your weeknight rotation. Ground turkey gets broken down into savory crumbles alongside golden-edged rutabaga cubes, all brought together with a punchy combination of fresh ginger, garlic, turmeric, coconut aminos, and a splash of apple cider vinegar. The double hit of both fresh and ground ginger gives the whole dish a bright, warming depth that feels bold without being overwhelming. Many spice blends and pre-seasoned proteins sneak in warm spices that can be hard to avoid, but every ingredient here is straightforward and easy to verify — no mystery seasonings, no hidden blends. Coconut oil does the heavy lifting for the sear, giving the rutabaga those gorgeous caramelized edges before the turkey ever hits the pan. Finished with sliced scallions and a handful of fresh parsley, it's colorful, fragrant, and comes together entirely in one skillet with minimal cleanup. This is the kind of meal that looks and tastes like you put in way more effort than you actually did.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
