Rutabaga might not be the first vegetable that comes to mind for a weeknight skillet, but once it's golden and caramelized in coconut oil, you'll wonder why you ever overlooked it. Ground turkey keeps things lean and satisfying, while fresh ginger, turmeric, and garlic build a warm, aromatic base that makes the whole kitchen smell incredible. The apple cider vinegar and coconut aminos add just enough brightness and depth to tie everything together without relying on heavy sauces or processed ingredients. This kind of dish hits all the right notes for a Mediterranean-inspired approach ā whole foods, quality protein, anti-inflammatory spices, and healthy fats working in harmony. Everything comes together in a single skillet, which means less cleanup and more time actually enjoying your meal. Finish it with scallions and a handful of fresh parsley, and you've got a colorful, crave-worthy hash that feels anything but boring.

Stir and continue cooking for another 8ā10 minutes, stirring every 2ā3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
