Rutabaga is the unsung hero of the root vegetable world, and this skillet hash gives it the spotlight it deserves. The cubes get seared in coconut oil until deeply golden and fork-tender, then tossed with ground turkey, fresh ginger, turmeric, and a splash of coconut aminos for a savory, slightly tangy finish that tastes far more complex than the ingredient list suggests. Legume-free eating can sometimes feel limiting when it comes to hearty one-pan meals, but this dish is genuinely satisfying without a single bean, lentil, or pea in sight. The double hit of fresh grated ginger and ground ginger gives the whole thing a warm, aromatic backbone that pairs beautifully with the earthy sweetness of the rutabaga. Coconut aminos do the heavy lifting in place of soy sauce, keeping the umami depth without any soy-based ingredients sneaking in. A scatter of fresh scallions and parsley at the end adds brightness and color, making it look as good as it tastes. This is the kind of weeknight dinner that comes together in one skillet and disappears just as fast.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
