Rutabaga doesn't get nearly enough credit, and this hearty skillet hash is proof it deserves a permanent spot in your weeknight rotation. Golden-seared rutabaga cubes, savory ground turkey, and a bold hit of fresh ginger come together in one pan for a meal that's warming, satisfying, and genuinely exciting to eat. Coconut aminos and apple cider vinegar add a bright, umami-rich finish without any of the sweetener-laden sauces that make so many savory dishes off-limits ā no hidden corn syrup, no label-scanning required. The double layer of ginger, both fresh-grated and ground, gives the whole dish a lively, aromatic backbone that pairs beautifully with earthy turmeric and caramelized onion. Everything cooks in a single skillet, so cleanup is minimal and the flavors build on each other naturally from start to finish. Finished with sliced scallions and a handful of fresh parsley, it looks as good as it tastes straight from the pan.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8ā10 minutes, stirring every 2ā3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
