Rutabaga is one of those underrated root vegetables that really shines when you give it some heat and time in a hot skillet — and this hash makes the most of every golden, caramelized edge. Ground turkey keeps things lean and satisfying, while fresh ginger, turmeric, and garlic layer in a warm, aromatic depth that makes the whole kitchen smell incredible. Coconut aminos and a splash of apple cider vinegar tie everything together with a savory, slightly tangy finish that feels way more complex than the ingredient list suggests. Eating fructose-free can get tricky with skillet meals because so many sauces and seasonings sneak in high-fructose ingredients — but every component here is straightforward and easy to verify. Rutabaga is a naturally low-fructose root, and the recipe leans on coconut aminos instead of conventional soy sauce or sweetened condiments, so there are no hidden sugars to worry about. The whole dish comes together in one pan, which means less cleanup and a genuinely weeknight-friendly dinner. Finish it with fresh scallions and a handful of parsley for a bright, herby contrast that makes it feel just a little bit fancy straight from the skillet.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
