Rutabaga doesn't get nearly enough credit, and this savory, golden hash is exactly the kind of dish that changes minds. Ground turkey gets cooked down with fresh ginger, garlic, turmeric, and ground ginger until deeply fragrant, then reunited with crispy-edged rutabaga cubes that have been pan-seared in coconut oil until tender and caramelized. A splash of apple cider vinegar and coconut aminos ties everything together with a bright, slightly tangy finish that keeps each bite interesting. Every single ingredient here is whole and straightforward — no additives, no stabilizers, no emulsifiers hiding in a sauce packet or seasoning blend. That matters more than people realize, since so many store-bought shortcuts and condiments quietly contain lecithin, mono- and diglycerides, or other processing aids that can be hard to spot on a label. Scallions and fresh parsley scattered on top at the end add a pop of color and freshness that makes this feel like a real meal rather than a weeknight scramble. It all comes together in one skillet, which means less cleanup and more time actually enjoying dinner.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
