Rutabaga doesn't get nearly enough credit, and this hearty skillet hash is exactly the kind of dish that changes minds. The root vegetable gets a proper sear in coconut oil until it's golden and caramelized on the outside and fork-tender within, giving the whole dish a satisfying, almost meaty texture before the ground turkey even hits the pan. Fresh ginger, garlic, turmeric, and ground ginger layer in serious warmth and depth, making every bite feel bold and intentional rather than bland or one-note. Coconut aminos and a splash of apple cider vinegar tie everything together with a savory, slightly tangy finish that doesn't rely on any citrus fruit whatsoever — no lemon, no lime, no orange in sight. That makes this a genuinely easy weeknight win for anyone who needs to avoid citrus but still wants a dish with real brightness and complexity. Everything comes together in a single skillet, and it goes straight to the table topped with fresh scallions and a handful of parsley for color. It's the kind of satisfying, one-pan meal that earns a permanent spot in the regular rotation.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
