Rutabaga doesn't get nearly enough credit, and this hearty skillet hash is exactly the kind of dish that changes minds. The root vegetable gets a proper sear in coconut oil until it's golden and caramelized on the outside and fork-tender within, giving the whole dish a satisfying, almost meaty texture before the ground turkey even hits the pan. Fresh ginger, garlic, turmeric, and ground ginger layer in serious warmth and depth, making every bite feel bold and intentional rather than bland or safe. Coconut aminos stand in beautifully for soy sauce, adding a savory, slightly sweet note without any of the additives that can sneak citric acid into your kitchen. Apple cider vinegar brings just enough brightness to lift the whole dish without relying on citrus juice or any of the processed flavor enhancers that make so many savory recipes off-limits. Everything finishes with a scatter of fresh scallions and optional parsley straight from the skillet, so cleanup is minimal and presentation is effortless. It's a genuinely satisfying one-pan meal that proves eating around a tricky restriction doesn't have to mean eating around flavor.

Heat 2 tbsp of the coconut oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced rutabaga in a single layer and cook, undisturbed, for 5 minutes, until the undersides are golden brown. Stir and continue cooking for another 8–10 minutes, stirring every 2–3 minutes, until the rutabaga is tender when pierced with a fork and golden on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
