Bright, tangy, and loaded with crunch, this pickled vegetable medley is the kind of condiment that makes everything on the plate more exciting. Daikon radish, carrot, cucumber, and red cabbage are salted to draw out moisture, then bathed in a warm brine of apple cider vinegar, honey, fresh ginger, lime, and a touch of turmeric — every single ingredient playing by the rules of the autoimmune protocol. What makes this approach so satisfying is that the brine does all the heavy lifting: no nightshades, no seed-based spices, no grains, just clean, vibrant flavor that develops beautifully in the fridge. The turmeric turns the whole jar a gorgeous golden hue, and the ginger-lime combination gives it a brightness that store-bought pickles simply can't match. It comes together in well under an hour of active effort and makes six servings, so you'll have plenty to pile onto proteins, tuck into lettuce wraps, or eat straight from the jar. Fresh cilantro on top is optional but adds a lovely herbal lift if you have it on hand. Keep a jar in the fridge for up to five days and watch it disappear faster than you expect.

AIP restricts added sweeteners, but small occasional amounts of unrefined honey are accepted on the protocol; the ~1 teaspoon per serving here likely stays within that limited allowance. If you prefer to always avoid honey, please tap it and change its rating to Red.

Combine the daikon, carrot, cucumber, and red cabbage in a large heatproof bowl. Sprinkle with the fine sea salt, toss well, and let stand for 10 minutes until the vegetables begin to release a little liquid.
While the vegetables rest, combine the apple cider vinegar, water, honey, grated ginger, lime zest, lime juice, and turmeric in a medium saucepan. Bring to a simmer over medium heat, stirring until the honey is fully dissolved, about 3–4 minutes. Remove from the heat.
