Tangy, bright, and alive with flavor, this fermented cabbage is a fridge staple you'll find yourself reaching for constantly. The combination of fresh ginger, lime zest, and turmeric gives it a punchy, aromatic twist that sets it apart from a plain sauerkraut β the pale golden color alone makes it look stunning on a plate. Every single ingredient here is naturally free of wheat and gluten, so there's no label-reading anxiety and no need to swap anything out. The process is beautifully simple: salt, massage, pack, and wait. Massaging the cabbage until it releases its own brine is the key step, and watching that liquid pool at the bottom of the bowl is genuinely satisfying. After three to five days at room temperature, you'll have a probiotic-rich condiment that's incredible piled onto grain bowls, tacos, eggs, or eaten straight from the jar. It keeps for up to four weeks in the refrigerator, so one batch goes a long, long way.

Place the sliced cabbage in a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8β10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl.
Add the grated ginger, lime zest, and turmeric to the bowl. Toss and squeeze everything together until the aromatics are evenly distributed and the cabbage is tinted pale yellow from the turmeric.
