Tangy, bright, and alive with flavor, this fermented cabbage is a serious upgrade from anything you'd find in a store-bought jar. Massaging the cabbage with non-iodized sea salt draws out its natural juices, creating the brine that does all the fermentation work β no vinegar shortcuts, just real lacto-fermentation. Fresh ginger, lime zest, and a pinch of turmeric give it a warm, citrusy kick that makes it genuinely exciting to eat straight from the jar or piled onto grain bowls, tacos, or avocado toast. The whole process is plant-based from start to finish, with nothing but whole vegetables and aromatics β no animal products, no hidden additives to second-guess. It does take a few days of patience, but the hands-on time is minimal and the daily press-down check is almost meditative. By day three you can start tasting and decide exactly how tangy you want it, which means you're always in control of the final result. Once it hits the fridge, it keeps for up to four weeks and just keeps getting better.

Place the sliced cabbage in a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8β10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl.
Add the grated ginger, lime zest, and turmeric to the bowl. Toss and squeeze everything together until the aromatics are evenly distributed and the cabbage is tinted pale yellow from the turmeric.
