Tangy, bright, and alive with flavor, this fermented cabbage is the kind of condiment that quietly transforms every meal it touches. Fresh ginger and lime zest bring a citrusy warmth that sets it apart from a classic kraut, while a pinch of turmeric gives the whole jar a gorgeous golden hue. The process is beautifully simple β just cabbage, salt, and a few aromatics β which means there are absolutely no grains or fillers hiding anywhere in the ingredient list. Fermentation is driven entirely by the natural brine the cabbage releases when you massage it with salt, so no vinegar or starter cultures are needed either. After three to five days at room temperature, you'll have a pleasantly sour, probiotic-rich condiment ready to pile onto grain-free bowls, tuck into lettuce wraps, or eat straight from the jar. It keeps in the fridge for up to four weeks, getting a little more complex and deeply tangy as the days go on.

Place the sliced cabbage in a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8β10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl.
Add the grated ginger, lime zest, and turmeric to the bowl. Toss and squeeze everything together until the aromatics are evenly distributed and the cabbage is tinted pale yellow from the turmeric.
