Bright, refreshing, and built entirely from whole ingredients, this fennel and citrus salad is the kind of dish that makes you feel like you're eating somewhere sunny and warm. Shaved fennel brings a delicate crunch and mild anise flavor that pairs beautifully with juicy orange segments, while fresh mint and a scattering of cilantro keep every bite lively. The dressing is a simple whisked blend of lime juice, lime zest, grated ginger, honey, and olive oil — nothing processed, nothing hidden, just clean flavors that come together fast. For anyone navigating thickener-free eating, salad dressings can actually be a sneaky source of trouble since many store-bought versions rely on stabilizers and gums to hold their texture. Here, the emulsion forms naturally from the olive oil and citrus, so the dressing coats the salad without any additives at all. Tossed together on a platter with the reserved fennel fronds draped over the top, it looks genuinely stunning with almost zero effort. This one is equally at home as a light lunch or an elegant side alongside grilled fish or roasted chicken.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
