Crisp shaved fennel, juicy orange segments, and a zingy ginger-lime dressing come together in a salad that feels genuinely refreshing and a little bit special. The fennel is sliced paper-thin so it's tender enough to eat raw while still delivering that subtle anise flavor, and the citrus segments add bursts of sweetness that balance everything out beautifully. Fresh mint and optional cilantro keep the whole bowl bright and aromatic, while the honey-kissed dressing ties it all together with just enough heat from the ginger. Every single ingredient here is naturally free of wheat — no swaps, no substitutions, no label-reading required. That makes it a fantastic option when you want something impressive that doesn't demand any extra effort to keep safe. It works as a light starter, a side alongside grilled fish or chicken, or honestly just a bowl you eat standing over the kitchen counter because you can't wait.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
