Bright, refreshing, and built around some genuinely bold flavors, this fennel and orange salad is the kind of dish that looks impressive but comes together with minimal effort. Shaved fennel brings a delicate crunch and subtle anise note that plays beautifully against juicy orange segments, while the thinly sliced red onion adds just enough bite to keep things interesting. The dressing is where everything really sings — fresh lime juice and zest, a touch of raw honey, and finely grated ginger create a zingy, slightly sweet vinaigrette that ties every element together without overpowering the produce. For anyone avoiding turmeric, this recipe is a genuinely easy win. Salad dressings and citrus-forward dishes can sometimes sneak in golden spice blends or pre-made condiments that contain it, but every component here is made from scratch with clean, straightforward ingredients — nothing hidden, nothing ambiguous. Torn mint leaves and optional cilantro add herbal freshness, and the reserved fennel fronds scattered over the top make the whole platter look like it came straight from a restaurant kitchen. It's a stunning side for grilled fish or roasted chicken, and honestly good enough to eat on its own.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
