Bright, refreshing, and built entirely from produce and pantry staples, this shaved fennel and citrus salad is the kind of dish that looks stunning on a platter and tastes even better than it looks. Thin ribbons of fennel pair beautifully with juicy orange segments, and the combination of fresh mint, red onion, and optional cilantro keeps every bite lively and aromatic. The dressing is where things really sing — grated ginger and lime zest bring a zippy warmth, while a touch of raw honey rounds out the acidity without tipping into sweetness. Because every single ingredient here is whole and plant-forward, there's zero concern about hidden fungi or fungal-derived additives that can sneak into processed dressings and packaged salad kits. Making the dressing from scratch with olive oil, fresh lime juice, and real honey means you stay in complete control of what goes into the bowl. It's an elegant side that works alongside grilled fish or roasted chicken, but honestly it's satisfying enough to eat on its own for a light lunch.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
