Crisp shaved fennel, juicy orange segments, and a bright ginger-lime dressing come together in a salad that feels genuinely refreshing — the kind of dish that wakes up your palate and looks stunning on the table. The fennel is sliced paper-thin so it stays tender yet crunchy, and supreming the oranges directly over the bowl means every drop of juice goes straight into the salad. A touch of raw honey rounds out the dressing without making it sweet, while fresh mint and optional cilantro keep things lively and aromatic. This is naturally free of beans, lentils, peas, and any legume-derived ingredients — no swaps needed, no label-reading required. The whole thing comes together with a whisk and a good knife, making it an effortless choice for a light lunch, a dinner party starter, or a vibrant side alongside grilled proteins. Fennel can be polarizing, but the citrus and ginger here soften its anise edge beautifully, winning over even skeptics. It's the kind of salad people ask about before they even sit down.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
