Bright, refreshing, and genuinely beautiful on the plate, this shaved fennel and citrus salad is the kind of dish that makes you feel good from the first bite. Fennel is a standout ingredient for digestive wellness — it's long been valued for its soothing, gut-supportive properties, and pairing it with fresh ginger (another powerhouse for digestion) makes this salad work hard while tasting effortless. The oranges are supremely juicy and naturally sweet, so the dressing of lime juice, lime zest, raw honey, and olive oil just amplifies what's already there rather than masking it. Thinly shaving the fennel on a mandoline is the key move — it transforms what can be a dense, fibrous vegetable into something delicate and almost silky. Red onion adds a little bite, torn mint keeps things cool and aromatic, and the optional cilantro finishes the whole thing with an herby lift. Everything here is whole, clean, and plant-forward, with no processed ingredients to second-guess. It's the kind of salad that earns a permanent spot in your rotation.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
