Crisp shaved fennel, juicy orange segments, and a bright ginger-lime dressing come together in a salad that feels genuinely refreshing and a little unexpected. The fennel is sliced paper-thin so it stays tender rather than tough, and the citrus segments add bursts of sweetness that balance the sharp bite of red onion. Fresh mint and optional cilantro keep every forkful lively, while the feathery fennel fronds scattered on top make the whole platter look effortlessly beautiful. Every single ingredient here is naturally free from gluten, so there's no need to audit labels or swap anything out — it just works as written. The dressing is a simple whisk of lime juice, lime zest, raw honey, grated ginger, and olive oil, which means no soy sauce, no grain-based thickeners, and no hidden surprises. It's the kind of dish that proves eating without gluten doesn't mean eating without excitement. Serve it as a light starter, a vibrant side alongside grilled fish or chicken, or let it shine on its own as a clean, flavor-packed lunch.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
