Crisp shaved fennel, juicy orange segments, and a bright ginger-lime dressing come together in a salad that feels genuinely refreshing and a little bit special. The fennel is sliced paper-thin so it's tender enough to eat raw while still delivering that subtle anise flavor, and the citrus segments add bursts of sweetness that balance everything out beautifully. Torn mint and a scatter of feathery fennel fronds finish the bowl with an herby, aromatic lift that makes it look as good as it tastes. The dressing is whisked together in minutes — lime juice, lime zest, fresh grated ginger, honey, and olive oil — and it coats every layer with a zingy, slightly sweet warmth. This is the kind of salad that works just as well alongside a weeknight dinner as it does on a holiday table. Since the whole dish is built around fresh produce, citrus, and a simple oil-based dressing, there's nothing here that raises any concern about hidden egg-based emulsifiers or creamy dressings with surprise ingredients. It's clean, vibrant, and completely fuss-free.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
