Bright, refreshing, and built entirely from produce and pantry staples, this shaved fennel and citrus salad is the kind of dish that looks stunning on a platter but comes together with almost no effort. Thin ribbons of fennel meet juicy orange segments, slivers of red onion, and torn mint in a combination that's crisp, aromatic, and genuinely exciting to eat. The dressing is where things get really interesting — fresh lime juice and zest, finely grated ginger, a touch of raw honey, and good olive oil whisked into something tangy, floral, and just a little spicy. Because every single component here is a whole, unprocessed ingredient, there's no need to scrutinize labels or worry about unexpected additions hiding in a bottled sauce or spice blend. Tree nuts and chestnuts have a way of sneaking into salad kits, pre-made dressings, and even some garnishes, so building this one from scratch is genuinely the smartest move. The mandoline work on the fennel takes a little care but rewards you with delicate, almost translucent slices that soak up the dressing beautifully. Finish it with the reserved fennel fronds and a handful of cilantro if you like, and you've got a side dish that's as elegant as it is effortless.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
