Bright, refreshing, and full of unexpected depth, this fennel and orange salad is the kind of dish that makes people stop mid-bite and ask what's in it. Shaved fennel brings a delicate anise crunch, sweet navel orange segments add juicy bursts of citrus, and torn mint keeps everything feeling light and alive. The dressing is where the magic really happens — fresh lime juice, lime zest, and finely grated ginger come together with honey and olive oil into something floral, tangy, and just a little warming without a trace of heat. For anyone navigating capsaicin sensitivities, bold flavor can feel hard to come by, but this salad proves that ginger and citrus can carry a dish with just as much personality as any spice. There are no hidden chili-based ingredients to worry about here — every component is straightforward and easy to verify. It comes together with simple knife work and a quick whisk, making it an effortless but genuinely impressive addition to any table. Finish it with the reserved fennel fronds and a scatter of fresh cilantro, and it looks as good as it tastes.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
