Crisp shaved fennel, juicy orange segments, and a bright ginger-lime dressing come together in a salad that feels genuinely refreshing and a little bit special. The fennel is sliced paper-thin so it stays tender rather than tough, and the citrus segments add bursts of sweetness that balance the anise-like bite. Red onion and torn mint weave through every forkful, giving the whole thing a lively, almost herbaceous quality that keeps you going back for more. The dressing is where it all clicks — fresh lime juice, a hit of grated ginger, a touch of raw honey, and good olive oil whisked into something cohesive and zingy. Everything here is plant-based and naturally free of any animal proteins, so there is zero guesswork about what went into the bowl. It comes together with minimal cooking and maximum flavor, making it an easy win for a weeknight side or a showstopper on a dinner party table. Finish it with the reserved fennel fronds and a handful of cilantro if you have it — those little touches make it look as good as it tastes.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
