Bright, refreshing, and built entirely from whole ingredients, this fennel and citrus salad is the kind of dish that looks like it came from a fancy restaurant but comes together with nothing more than a knife, a bowl, and a good mandoline. Every component — shaved fennel, juicy orange segments, red onion, fresh mint, and a zippy ginger-lime dressing — is exactly what it says it is, with zero synthetic dyes or artificial additives hiding anywhere on the ingredient list. That matters more than you might think, since bottled dressings and pre-made salad kits are notorious for sneaking in unnecessary colorants to make things look more vibrant. Here, the color is all natural: the deep orange of navel citrus, the pale green of fennel fronds, the purple blush of thinly sliced red onion. The dressing is a simple whisk of fresh lime juice, lime zest, raw honey, grated ginger, and olive oil — clean, punchy, and genuinely delicious. A scatter of cilantro over the top is optional, but it adds one more layer of herby freshness that ties everything together beautifully. This is the kind of salad that makes you feel good about what you're eating without sacrificing a single bit of flavor.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
