This bright, refreshing salad is exactly the kind of dish that makes you feel like you're eating well without any effort at all. Shaved fennel brings a delicate crunch and subtle anise flavor that pairs beautifully with juicy orange segments, and the ginger-lime dressing ties everything together with a little zing and warmth. The whole thing is built entirely from plants, fresh herbs, and pantry staples — no meat, no dairy, no hidden animal-derived additives to stress over, which makes it a genuinely easy win for anyone navigating alpha-gal syndrome. The dressing comes together in one small bowl with lime juice, zest, grated ginger, raw honey, and olive oil, and it's punchy enough to make every bite feel intentional. Torn mint and optional cilantro scattered through the salad add layers of freshness that make this feel far more special than the ingredient list suggests. It works beautifully as a light standalone meal or alongside a simple grain, and it's the kind of recipe you'll find yourself coming back to whenever you need something vibrant and fuss-free on the table.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
