Bright, refreshing, and genuinely stunning on a plate, this salad brings together shaved fennel, juicy orange segments, and a zingy ginger-lime dressing that tastes like it took way more effort than it did. The fennel is sliced paper-thin so it stays crisp while soaking up all that citrusy dressing, and the torn mint leaves add a cool, herby lift that makes every bite feel alive. Following the autoimmune protocol means navigating around grains, legumes, nightshades, seeds, and eggs — and salads that actually satisfy can be harder to find than you'd think. This one delivers real substance and bold flavor using nothing but whole vegetables, fresh citrus, raw honey, and extra-virgin olive oil, so every ingredient earns its place. The dressing comes together in one small bowl with a quick whisk, and the whole salad is ready to serve in under thirty minutes for four people. Reserved fennel fronds scattered over the top make it look like something from a restaurant, and the optional cilantro adds another layer of freshness if you have it on hand. It's the kind of dish that makes eating this way feel genuinely exciting rather than like a compromise.

AIP restricts added sweeteners, but small occasional amounts of unrefined honey are accepted on the protocol; the ~1/4 teaspoon per serving here likely stays within that limited allowance. If you prefer to always avoid honey, please tap it and change its rating to Red.

Trim the fennel bulbs: cut off the stalks and reserve a small handful of the feathery fronds. Halve each bulb through the root, then use a mandoline or a sharp knife to shave each half crosswise into very thin slices, about 1/16 inch thick. Place the shaved fennel in a large mixing bowl.
Cut the top and bottom off each orange, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over the bowl of fennel to catch any juice, cut between the membranes to release the segments. Squeeze the spent membranes over the bowl to extract any remaining juice, then discard the membranes.
