Classic béarnaise is one of the great French sauces, but the traditional version leans heavily on tarragon and a wine-vinegar reduction that pairs almost exclusively with beef — which makes it a tough sell when red meat is off the table. This bright, buttery riff swaps those flavors for fresh ginger, lime juice, and a touch of rice wine vinegar, building a sauce that feels just as luxurious but opens up a whole new world of pairings. The reduction is the secret weapon: simmering ginger, shallot, and white wine down to a single concentrated tablespoon before it ever meets the egg yolks means every drop of that flavor gets locked into the finished sauce. From there, the bain-marie method gently cooks the yolks to a safe 160°F while keeping the texture silky and emulsified, so you get that glossy, spoonable consistency without any scrambled-egg anxiety. Cold butter cubes added one at a time give the sauce its signature richness and sheen, while a final hit of lime zest and fresh ginger keeps everything tasting alive and vibrant rather than heavy. Spoon it over poached fish, roasted chicken, steamed vegetables, or grilled seafood and watch it disappear fast.

Combine the lime juice, white wine, rice wine vinegar, grated ginger, minced shallot, and white pepper in a small saucepan over medium heat. Bring to a simmer and cook until the liquid is reduced to about 1 tablespoon, 4–5 minutes. Strain through a fine-mesh strainer into a heatproof bowl, pressing on the solids; discard the solids. Let the reduction cool for 2 minutes.
Add the pasteurized egg yolks and cold water to the bowl with the cooled reduction and whisk until the mixture is pale and slightly thickened, about 1 minute.
