Classic béarnaise is already a showstopper, but this bright, aromatic twist takes the French original somewhere entirely new. A reduction of lime juice, dry white wine, rice wine vinegar, fresh ginger, and shallot forms the flavor backbone before a single drop of butter ever hits the bowl — and the result is tangy, warming, and deeply fragrant. Cold butter cubes are whisked in gradually over a bain-marie until the sauce turns glossy and luxuriously thick, which is exactly the kind of technique that makes a simple steak or roasted vegetable feel like a restaurant plate. The double hit of fresh ginger — once in the reduction and again stirred in at the finish — gives the sauce a lively, almost floral heat that plays beautifully against the citrus. Tree-nut-free cooking can sometimes feel like you're sacrificing richness, but this sauce proves that butter, egg yolks, and bold aromatics are more than enough to deliver something truly indulgent. The lime zest added at the end keeps everything tasting fresh rather than heavy, so the sauce lifts the dish instead of weighing it down. Make it once and it will absolutely become your go-to for anything that needs a little something extraordinary on top.

Combine the lime juice, white wine, rice wine vinegar, grated ginger, minced shallot, and white pepper in a small saucepan over medium heat. Bring to a simmer and cook until the liquid is reduced to about 1 tablespoon, 4–5 minutes. Strain through a fine-mesh strainer into a heatproof bowl, pressing on the solids; discard the solids. Let the reduction cool for 2 minutes.
Add the pasteurized egg yolks and cold water to the bowl with the cooled reduction and whisk until the mixture is pale and slightly thickened, about 1 minute.
