Bright, tangy, and alive with natural fizz, this homemade brew is a genuinely refreshing alternative to store-bought drinks that can hide surprising additives or flavorings. The base is a simple green tea sweetened with raw honey, fermented with a SCOBY until it reaches that perfect balance of tart and lightly sweet. Fresh ginger and real lemon juice go in for the second ferment, building carbonation and layering in a zippy, warming flavor that tastes far more complex than the short ingredient list suggests. Because every component here is plant-based and naturally derived, there's nothing to second-guess — no meat-derived broths, gelatin, or hidden animal proteins that can sneak into packaged beverages. The two-stage fermentation process does take a little patience, but most of that time is completely hands-off, and the payoff is a bubbly, probiotic-rich drink you made entirely from scratch. Pouring a chilled glass of something this vibrant — knowing exactly what went into it — is a genuinely satisfying feeling.

Bring 3.5 quarts of filtered water to a boil in a large pot. Remove from heat, add the green tea bags, and steep for 5 minutes, then remove and discard the bags.
Stir the honey into the hot tea until fully dissolved. Allow the sweet tea to cool to room temperature — it must read below 85°F (29°C) on a kitchen thermometer before proceeding, as higher temperatures will harm the SCOBY.
