This deeply savory broth is the kind of thing you'll want to sip slowly from a mug on a cold afternoon, letting the warmth settle into your bones. Kombu and wakame bring a natural oceanic depth, while fresh ginger and smashed garlic build a fragrant, aromatic backbone that makes the whole kitchen smell incredible. A splash of apple cider vinegar and coconut aminos round out the flavor with just enough brightness and umami to keep every sip interesting. The turmeric adds a gentle earthiness and a gorgeous golden hue that makes the finished broth look as nourishing as it actually is. Because every ingredient here is whole, simple, and plant- or animal-based in the most straightforward sense, there's no need to scrutinize labels for hidden nut derivatives or shared-facility warnings. The straining step is key โ it gives you a beautifully clear, silky liquid that feels refined without any extra effort. Finish it with a squeeze of lemon and a scatter of scallions, and you have something that tastes like it took all day but really didn't.

Place the kombu in a large saucepan with the water. Let it soak for 10 minutes at room temperature โ the kombu will soften and the water will turn pale green.
Set the saucepan over medium heat and bring the kombu water to a bare simmer. Remove and discard the kombu just before the liquid reaches a full boil โ small bubbles will begin to form at the edges of the pan.
