Coconut aminos is a common stand-in for soy sauce on a candida diet. It does carry a little sugar from coconut sap, but this recipe uses only about 2 1/4 teaspoons per serving, which is likely fine.









Place the chicken breasts in a medium saucepan with 2 cups of water and 1/2 tsp salt. Bring to a boil over medium-high heat, then reduce to a gentle simmer and cook for 15–18 minutes, until the chicken is opaque throughout and reaches 165°F (74°C) on an instant-read thermometer at the thickest part.
Transfer the chicken to a cutting board and let it rest for 5 minutes. Using two forks, shred the meat into thin, bite-sized pieces.
