Toast the walnut halves in a dry skillet over medium heat, stirring frequently, until fragrant and lightly golden, about 4–5 minutes. Watch closely, as they can brown quickly. Transfer to a cutting board and roughly chop; set aside.
Combine the orange juice, honey, grated ginger, cardamom, cinnamon, turmeric, and sea salt in a medium saucepan. Stir to combine and bring to a gentle simmer over medium heat, stirring until the honey dissolves, about 2 minutes.
