Cabbage rarely gets to be the star, but this braised version earns every bit of the spotlight. The wedges are seared hard in coconut oil first, building a deep golden crust before they ever hit the oven ā that step alone transforms a humble vegetable into something genuinely craveable. From there, garlic, fresh ginger, and turmeric bloom in the pan, and a braising liquid of coconut aminos, apple cider vinegar, and bone broth does the slow, savory work of making every layer tender and glossy. Coconut aminos stand in beautifully for soy sauce here, delivering that umami depth without any of the off-limits ingredients that make so many Asian-inspired dishes tricky to navigate on a reset. The finished wedges are silky at the core, caramelized at the edges, and coated in a concentrated pan glaze that you'll want to spoon over everything. A scatter of fresh parsley at the end keeps it bright. This is the kind of side dish that makes compliant eating feel genuinely exciting rather than like a compromise.
