Only unpasteurized juice is a concern in pregnancy. Packaged juice and coconut water sold in stores is treated - if there is no "not pasteurized" warning on the label, it is fine.







Combine the coconut water, sliced ginger, and honey in a small saucepan over medium heat. Stir until the honey dissolves, then bring to a gentle simmer and cook for 3β4 minutes, until the liquid is fragrant and the ginger flavor is pronounced.
Remove from the heat and let the ginger syrup steep for 10β15 minutes, until cooled to room temperature. Pour through a fine-mesh strainer into a pitcher or large measuring cup, pressing the ginger slices to extract as much liquid as possible; discard the solids.
