Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of cold-weather cooking that makes your kitchen smell incredible for hours. Every component — from the smashed garlic and cremini mushrooms to the pomegranate juice and bone broth — is naturally free of wheat, so there's no swapping or substituting required. The braising liquid gets its complexity from apple cider vinegar, turmeric, and fresh herbs rather than any flour-thickened sauce, which means the broth stays light but intensely flavorful. Duck legs are one of the most forgiving cuts you can braise; the long, slow cook renders the fat and leaves the meat falling off the bone in the best possible way. Coconut oil gets the sear started, and that initial deep-golden crust on the skin adds a layer of texture and flavor that carries through the entire dish. A scatter of fresh parsley at the end brightens everything up just before serving. This is a genuinely satisfying bowl that doesn't feel like it's missing a thing.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
