Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of cold-weather cooking that makes your kitchen smell incredible for hours. The duck legs get a proper sear first — skin-side down in a hot Dutch oven — so the fat renders out and the skin turns a deep, crackling golden brown before the long braise even begins. Cremini mushrooms, sweet carrots, celery, and ten whole smashed garlic cloves build a hearty base, while pomegranate juice and apple cider vinegar add a subtle brightness that keeps the broth from feeling heavy. A pinch of turmeric and ground ginger round out the aromatics alongside fresh thyme, rosemary, and bay leaves, giving the whole pot a warmth that's complex without being fussy. Because everything here is straightforward pantry and produce — no sauces, no pre-made stocks with mystery additives — you never have to second-guess what's in the bowl. After nearly two hours of low, gentle braising, the meat pulls away from the bone with zero resistance and soaks up every bit of that fragrant, glossy broth. Ladle it over whatever you like, scatter some fresh parsley on top, and call it the best thing you've made all season.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
