Rich, slow-braised duck stew is the kind of deeply satisfying meal that feels like it belongs on a restaurant menu, yet it comes together in a single Dutch oven with ingredients you can easily source and trust. Every component here — from the bone-in duck legs to the cremini mushrooms, carrots, and fragrant herbs — is naturally free of rye, so there's no need to scrutinize labels or swap anything out. The magic starts with a proper sear on the duck skin, building a golden, caramelized crust that gives the braising liquid incredible depth before a drop of broth even hits the pot. Pomegranate juice and apple cider vinegar add a subtle sweet-tart backbone that balances the richness of the duck beautifully, while turmeric and ginger weave in a gentle warmth you'll notice in every spoonful. After nearly two hours of low, slow braising, the meat becomes completely fall-off-the-bone tender and soaks up all those savory, herb-laced juices. Ladle it into deep bowls with plenty of vegetables and broth, finish with a handful of fresh parsley, and you have a showstopper of a stew that's as nourishing as it is impressive.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
