Rich, deeply savory, and built entirely around duck, this braised stew is the kind of cold-weather comfort food that earns a permanent spot in your rotation. The duck legs get a long, slow braise in a fragrant mix of pomegranate juice, bone broth, and apple cider vinegar, which coaxes the meat into falling-off-the-bone tenderness while building a broth that tastes like it simmered all day — because it did. Cremini mushrooms, carrots, celery, and a full ten cloves of garlic round out the pot, soaking up all that herby, turmeric-kissed liquid as they cook. The initial hard sear on the skin is the secret weapon here: those golden, caramelized bits left behind in the Dutch oven become the flavor foundation for everything that follows. Every ingredient in this recipe is naturally free of pork and pork-derived products, so there is no label-reading required and no substitutions needed — it works exactly as written. Finish each bowl with a scatter of fresh parsley and you have a restaurant-worthy stew that is as satisfying to make as it is to eat.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
