Rich, deeply savory, and built for slow cooking, this braised duck stew is the kind of meal that makes the whole kitchen smell incredible. Duck legs are seared until the skin turns a deep, crackling golden brown, then nestled into a fragrant braise of smashed garlic, cremini mushrooms, carrots, celery, and fresh herbs. What makes the braising liquid genuinely special is the combination of pomegranate juice and apple cider vinegar — they add a subtle tartness and depth that balances the richness of the duck beautifully. Ground turmeric and ginger round out the flavor with a gentle warmth that builds as everything simmers low and slow for nearly two hours. The result is fall-off-the-bone meat swimming in a broth that tastes like it took far more effort than it actually did. Every ingredient here is straightforward and naturally free of tree nuts, so there's no label-reading anxiety or substitution gymnastics required — just honest, whole-food cooking. Finish each bowl with a scatter of fresh parsley and you've got a showstopper of a weeknight or weekend dinner.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
