Rich, deeply savory, and built for slow cooking, this braised duck stew is the kind of meal that fills the whole kitchen with an irresistible aroma before it even hits the table. Duck legs are seared until the skin turns a deep, crackling gold, then nestled into a broth layered with smashed garlic, cremini mushrooms, carrots, celery, and a splash of pomegranate juice that adds a subtle, almost wine-like depth. Turmeric and ground ginger bring warmth without any of the sharp, sweet spice that nutmeg typically contributes to classic braises — so if you're avoiding that particular ingredient, this recipe is already built to work beautifully without it. Apple cider vinegar brightens the whole pot, and fresh thyme, rosemary, and bay leaves do the heavy lifting on aromatics during the long, low braise. After nearly two hours on the stovetop, the meat is completely falling-off-the-bone tender and the broth has transformed into something genuinely craveable. A scatter of fresh parsley at the end keeps things feeling vibrant and a little elegant. This is the kind of stew you make on a slow weekend and feel quietly proud of all week.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
