Rich, deeply savory, and built entirely without tomatoes, peppers, or any other nightshade ingredient, this braised duck stew is the kind of cold-weather comfort food that feels genuinely indulgent rather than like a compromise. The duck legs are seared skin-side down until deeply golden before braising, which builds a layer of flavor that carries through every spoonful of the finished broth. Pomegranate juice and apple cider vinegar step in where tomatoes might otherwise go, giving the braising liquid a subtle tartness and gorgeous color without any of the usual problem ingredients. Cremini mushrooms, carrots, celery, and a full ten cloves of garlic round out the pot, making this feel hearty and complete rather than stripped down. Ground turmeric and ginger add warmth and depth, while fresh thyme, rosemary, and bay leaves perfume the whole braise as it slowly works its magic on the stovetop. After nearly two hours of low, gentle cooking, the duck meat is completely falling-off-the-bone tender and the broth is rich enough to drink straight from the bowl. A scatter of fresh parsley at the end brightens everything up and makes it look as good as it tastes.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
