Rich, slow-braised duck legs in a fragrant broth of garlic, mushrooms, and pomegranate juice — this is the kind of deeply satisfying stew that feels like it took all day, even if your hands-on time is minimal. Managing iodine intake often means scrutinizing packaged broths, seasoning blends, and processed ingredients for hidden additives, but every component here is straightforward and easy to verify. The seasoning stays clean with fine sea salt, turmeric, and ginger, and the liquid base is built from bone broth and pomegranate juice rather than anything shelf-stable and mystery-laden. Coconut oil handles the searing, which means no dairy or iodine-containing fats to worry about. The real magic happens when the duck legs braise low and slow, the rendered fat melting into the broth alongside cremini mushrooms, carrots, celery, and ten whole cloves of garlic until everything is impossibly tender and the kitchen smells incredible. A handful of fresh parsley scattered over the top at the end adds a bright, herby finish that pulls the whole bowl together. This is the kind of recipe you'll come back to whenever you want something genuinely comforting without any of the ingredient second-guessing.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
